We live in a world of specialization. For me, it was clear early on: That is not my path. I want to maintain diverse agriculture in a closed farm cycle — arable farming, livestock breeding, and viticulture belong together and support each other.

Since 2008, Waldviertler Blondvieh has been grazing on our pastures. Their manure becomes the best fertilizer and the basis of our biodynamic preparations — this is how we give life back to the soil.

Waldviertler Blondvieh

Since 2008, the robust, small-framed cattle breed has grazed freely on our pastures in a suckler cow system — and naturally reduces vegetation in the old apricot orchard. Their manure is turned into fertilizer and biodynamic preparations.

We cultivate our fields according to the principles of Dammkultur: The soil is only aerated, not turned. This creates a loose, finely rooted soil with its own microclimate — since 2019, Quinoa has also been growing here (queenoa.at).

Three hectares are dedicated to vegetable cultivation — biodynamically cultivated by Rudi Hoheneder, who supplies us and his members with fresh vegetables summer and winter.

Windbreak

As fewer and fewer birds stopped by, we planted windbreaks around the estate with many trees and shrubs — natural nesting sites that have noticeably increased biodiversity.

More than a winery

What we do only makes sense as a whole

The vineyards, the fields, the livestock, the insects in the soil — everything belongs together. Arable farming, animal husbandry, and viticulture support each other: The animals' manure is the best fertilizer, the fresh hay the best feed.

History

Since the
12th century

First mentioned around 1150 as property of the Passau Cathedral Chapter; 1310 the Gothic chapel, in the 1540s the Renaissance castle including an alchemist's laboratory. In 1869, the Salomon family acquired the estate at auction.

Our Vineyards — each a unique character

Tobel

Already in 1975, the grandfather planted the first Riesling vines in the meter-thick loess of the Tobel — an old name for "valley incision", wind-exposed and high on the Wagram.

Brunnberg

The name says it all: The vineyard on the Wagram edge is based on a multitude of springs — a foundation for the settlement and the first vineyards of the region.

Wachrein

In the 13th century, the area was called Wachrein — "wac" for wave, "rain" for border: a surging border, when the Danube still reached as far as the Wagram.

Waasweg

The old name for this wind-exposed site. Here the Chardonnay is rooted, which Father Fritz planted in the loess decades ago with a keen sense.

Maulbeerpark

Brown earth and deep loess. Precisely here, the conversion to biodynamics had a particularly positive impact — a perfect balance between sugar and acidity.

Halterhaus

Home of the Roter Veltliner — once one of the most important grape varieties of the Wagram, passed down in the old cellar records of father and grandfather.

in the Cellar

Fritz Salomon's wines mature over years in the centuries-old cellar vaults of Gut Oberstockstall — there they get the peace and time to mature that they need. In the vineyard, we work Demeter-certified; in the cellar, we ferment exclusively spontaneously, without temperature control. We take nothing away and add nothing — except for small amounts of sulfur. This is how open, vital, long-lived wines are created: Fingerprints of their terroir.
