We cultivate our fields according to the principles of Dammkultur: The soil is only aerated, not turned over. This creates loose, finely rooted soil with its own microclimate — Quinoa has also been growing here since 2019.
When we noticed that fewer and fewer birds were stopping by, we planted windbreaks around the estate with a variety of trees and shrubs — natural breeding grounds that have noticeably increased biodiversity in the fields and vineyards.
