Coolness and freshness dominate the texture, while earthy, red-berry, and subtly meaty notes define the aroma profile. At least initially. Over the years, our Pinot Noir often undergoes astonishing metamorphoses, repeatedly adding mushrooms, game, dark cherries, forest floor, and pepper to its sensory framework. The tannin is soft, while the acidity is structured without being aggressive. Drinkability and depth go hand in hand.
