After a short crushing, the grapes along with their skins are spontaneously fermented and without temperature control. Using a slowly rotating paddle, the mash is punched down twice a day for over 5 minutes in order to extract aromas, tannins, and color from the skins. After pressing, the wine is transferred partly into 1000-liter wooden barrels and partly into stainless steel, where it is currently developing on its fine lees. Oran is bottled unfiltered.
